Cherry Chocolate Cake - Here's a refreshing, unique cake I made for Koichi after an extremely hot summer day.

Chicken Meatballs - An easy and quick recipe for chicken meatballs that are great for meal prep! They go with everything -- pizza, noodles, rice, or on a sandwich! This is heavily inspired by a turkey meatball recipe by Giada de Laurentiis of Food Network fame (which you can find here) but adapted to chicken with simplified ingredients and advice.

Air Fryer Mochiko Chicken - An easy, healthier way to cook a Hawaiian classic. It pairs up well with some seasoned corn and white rice. Don't have chicken thighs? Chicken breasts work just as well!

Peanut Butter Oatmeal Cookies - Simple and delicious! There are a lot of note complexities in this cookie. The vanilla, brown sugar and peanut butter compliment each other so well.

William Shatner's Cappuccino Muffins - Here's a fun one for Star Trek fans. Perfect for on-the-go breakfasts. I personally add an additional teaspoon of instant cappuccino powder to enhance the coffee flavor.


Cookbook Recommendations


My Pokemon Cookbook + My Pokemon Baking Book - I have a complicated relationship with cookbooks themed with franchises. Some feel more like ideas for a party, some have recipes that are too safe, and others have little-to-nothing to do with the series the cookbook is themed with other than naming one of the recipes after a character. Out of the cookbooks I have borrowed that are in this category, the Pokemon ones have been my favorite. There are a lot of unique recipes, and they have a range of complexity to them, with some being great for beginners while others taking truly skilled chefs. Both are more of a dessert-focused book than a meal book, but that's okay with me, I prefer baking. (There is a ramen recipe in the former, so I had to include these here!) It's also a good mix of recipes that remind you of characters from Pokemon (like the Pikachu Lemon Tarts) while others that are more subtle with their theme (like the Spoink Black Sesame Cream Puffs). My only complaint with both books is that it claims you need a stand-in mixer to make the majority of the recipes, which isn't the case. At the time I'm writing this, I have a handheld mixer with a standard attachment, and everything I've made from these books has been great! My favorite recipe in these is the Spinda Raspberry Marble Cake -- easy to prepare and makes small, dense cakes with a subtle sweet flavor, but it's also adaptable for other berries as well.
